How we sharpen knives

Welcome To We Sharpen Knives – Knife Sharpening Service Parkdale

Why Knife Sharpening Service?

Blunt knives can be dangerous. Having them sharpened means they do the job with less forceful effort from you – reducing the risk of losing control over the blade and accidentally injuring yourself. Cheap knife sharpeners in your kitchen draw may temporarily give you a somewhat sharper edge. Still, they may also damage your blade, adding burrs and leaving metal residues and shavings that may contaminate your food.

We also sharpen Gyro-cutters, kebab knives, Shawarma slicer blades and Pizza Cutter Wheels, Standard and dressmaking Scissors, Garden Tools such as Pruners and Secateurs, Garden Shears/Hedge Trimmers, Axes and Hatches. We can sharpen your Straight Chisels as well. To see our full list of sharpening services click here.

Make sure that your knife sharpening service doesn’t use a high speed grinders

You should always make sure that your knife sharpening service doesn’t use a high-speed grinder or any other equipment that is not made for sharpening knives. Your knives are heat-treated to stay hard and sharp for a long time and high-speed grinders heat your knives quickly – especially near the edge where the steel is thin. This can ruin the temper of your knives and if this happens they will go dull very quickly and be more prone to edge rolling.

Our knife sharpening equipment is low-speed speed, and water-cooled. We remove minimal material and pose no risk to the heat-treated steel. This ensures both very sharp knives and the longest possible usable lifespan for each knife.

Knife Sharpening Service Sharpness TesterWe use the Edge-On-Up Edge Tester to Test for Sharpness

We’ll tell you how sharp your knife’s edge is before and after sharpening. There are tests like cutting paper or shaving hair that are often used to demonstrate sharpness, and they are helpful to a point, but they lack the precision and standardization required to answer the question truly.

We use the PT50 Series Sharpness Testers from Edge-On-Up to Measure and Quantify.

The PT50 Series of Edge-On-Up Sharpness Testers can measure and quantify the level of sharpness of any given edge. They work by measuring the force in grams required to cut through a standardized, calibrated medium. A result is a number that can be used to compare the relative sharpness of edges.
